What is Gaz?
Originating over 450 years ago in Isfahan, Gaz was traditionally made from the sap of the Tamarisk tree (Tamarix gallica), also known as "gaz-angebin" or "Honey of Gaz." This unique sap is harvested in late summer from the mountainous regions of Bakhtiari and Khansar, then combined with pistachios, flour, and natural sweeteners to create a rich, chewy candy still beloved today.
